Two Indulgent Diet-Friendly Recipes

Pageant girls have it tough. They have to be friendly AND thin. I'm kidding of course.. Well sort of. When I am preparing for a pageant I have a lot at stake. Not only do I have to be ready to compete in swimsuit, but I also have to be ready to fit into my clothes (AKA be as skinny as the last time I competed) When you go to a school like JMU it is kind of hard. We have EVERYTHING yummy and EVERYTHING unhealthy. Now that I'm home for the summer I've been looking for ways to "cheat" on my diet.. but not regret it too much later. Below I have my own personal recipes (yes I made them up) that I LOVE to "cheat" with. Keep in mind, these are still not 110% healthy BUT they are better than getting the real thing.

Cinnamon Chocolate "Frozen Yogurt"

1/2 Cup Nonfat Greek Yogurt
1 T Honey
1 t Ground Cinnamon
2 1/2 T Chocolate Shaves ---> These truly are the BEST (even though they are only available in the winter.. STOCK UP!!).. you have to trust me on this

Directions:
1.) Combine all ingredients & mix very well, until completely combined.
2.) Freeze for 1 1/2 hours or serve as is.
3.) Enjoy!

Diet "Pizza"

2 T Ragu Snack Pizza Sauce
1/4 Cup 2% Mozzarella Cheese
1 Piece of deli (sandwhich meat) style chicken
1 T GOOD quality Parmesan Cheese (Do not use the cheap stuff)
1 pinch of dried Oregano
1 pinch of dried Basil
A dash of Garlic Powder


Directions:
1.) Set your oven to broil
2.) Place the Flatout bread on a banking sheet and lightly coat with Ragu sauce
3.) Sprinkle the mozzarella and parmesan cheese evenly
4.) Break up the deli style chicken and spread evenly over pizza
5.) Sprinkle oregano, basil, and garlic powder evenly over pizza
6.) Place under the broiler for 3-4 Minutes.. You need to watch the pizza closely, starting at the 2 minute mark. You will know when its done when the sides start to curl up like "crust" and the cheese is melted and browning a little
7.) Slice into 8 small pieces and serve!

  1. Another "ice cream" recipe :)

    1. Take a banana (or 2 or 3) and cut it up into small slices.
    2. Place the banana slices into a plastic freezer bag.
    3. Mash up the banana slices with your hands (I like to leave some chunks in there).
    4. Put the mashed bananas in the freezer (leave in there until they have reached your desired consistency)
    5. Take out the frozen banana puree and serve or run it through a food processor.
    6. Serve as is, with honey and peanut butter, or low-fat chocolate sauce :)
